It opens with strong sweetness of honey and a mild hint of caramel, then accompanied by a pleasant bitter sweet, transitioning to a floral note of honeysuckle and a slight freshness of orchid. Its rich caffeine and taste also makes a perfect coffee substitution!

Full Description

Known as honeysuckle aroma, this artisan tea’s original name- “Duck Honey” is derived from a whimsical folklore story that adds a veil of southern tea culture. This relatively new aromatic category was cultivated and gained its popularity in 1970s.

Phoenix Mountain, located in the coastal area of the Canton province possesses mineral-rich soil.  Covered by wild tea trees and tea farms, the folklores of Phoenix Dan Cong Tea permeate the fresh harvested tea as much as the surrounding mists and fog. The most ancient wild tea trees can reach upwards of 200 years in age. A special type of all natural Oolong tea, it is grown for its highly distinctive natural aroma, and is also believed to be the ancestor of all Oolong teas.

Rich and complex in flavor, it features 10 aromatic categories. Organized into hundreds aromatic subgroups by local tea scholars and experts from china, this artisan tea is the inspiration of their labor. Mandarin uses the word ‘Xiang’ or aroma for each specific type that mimics certain flower or fruit aroma. Phoenix Dan Cong’s aroma is never artificially added or perfumed but exclusively cultivated, and each aroma comes from tea plant’s natural aromatic compound.

Brewing Instruction

Gai Wan or ceramic pot
Add 6gram/1 tbsp
95 C / 205 F

Ceramic Teapot:

  • Add 8oz water and infuse for 3 min.
  • Repeat for another 4+ infusions and increase the steeping time by 30 seconds with each additional infusion 

Gai Wan (Recommended for best infusions):

  • Rinse leaves and discard the first infusion
  • Add water and infuse for 10 seconds for 3 infusions
  • Repeat for another 10+ infusions and increase the steeping time by 10 seconds with each additional infusion 

We strongly encourage experimenting with different quantities, steeping times and tea wares to find your most desired result. However, avoid over heated water, as it will over-extract the bitter compounds and astringency of the tea, whereas water that’s too cool might not fully extract the aroma and flavor.
